Yorkshire Pudding

Being an American family living in England, we tended to eat American food. Yorkshire pudding though is a MUST if you wish to prepare an English meal. Because these tend to be a bit bland by themselves, serve with a pot roast and yummy vegetables. My husband ate quite a few of these with jam on them. The butter in this recipe can be replaced with meat drippings from your roast. 
This recipe was taken from allrecipes.com and found under the name of "Quick and Easy Yorkshire Pudding."

Ingredients

  • 3 eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • 2 tablespoons butter

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. [In blender, mix eggs with the milk. Slowly add flour and blend. This should be pretty smooth.]
  3. Divide butter evenly into the twelve cups of a muffin tin, about 1/2 teaspoon per cup. Place tin in oven to melt butter, 2 to 5 minutes. [Mix batter in blender for a few more seconds right before you] Remove tin from oven, and distribute batter evenly among buttery cups.
  4. Bake in preheated oven 5 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake 25 minutes more or until puffed and golden.
