Chicken Broccoli Casserole

This was a family favorite in my home growing up. The first time I served it to Steve he got so excited! Apparently he had this meal while serving his mission in Hamburg, Germany. He thought I had somehow found this out and made the meal just for him. I wish I really were that great of a wife :)
These are approximations of how much you'll need of the ingredients. Add more or less of whatever according to your preference. We usually serve this over rice to make the meal stretch.

Ingredients:
2 chicken breasts cooked, diced
2 cups broccoli, bite size pieces, steamed
1 can Cream of Chicken Soup

1/2 cup mayonnaise
Curry powder, to taste (we enjoy a lot of curry!!)
1 T Lemon juice
1 cup grated cheddar cheese
1/2 cup of bread crumbs (or use crushed corn flakes)

*optional:  we recently tried adding 1/2 cup of pureed carrots to this after a lab in class on adding vegetables to meals. We couldn't even taste the carrots.

Directions:
  1. Preheat oven to 350 degrees.
  2. Add the chicken and broccoli to a casserole dish.
  3. Mix the cream of chicken, mayonnaise, curry powder, and lemon juice together (if using pureed carrots, add to the mixture) and then pour into the casserole dish.
  4. Cover the mixture with cheese and then the bread crumbs.
  5. Bake in oven for 30 minutes and then serve.
