Basic Crepes

 The first time I ever had crepes was April 6th, 2008, the day after meeting my husband in person. His aunt invited me to come over to her house, where Steve was staying, and watch the first session of Sunday General Conference there. The first time we made them ourselves, we were married and needed a new recipes to add to our collection. We ended up having crepes three times that week and eventually got a little sick of them. After reading about all the fillings that can be added, I think I'm ready to try crepes again. Here is the basic crepe recipe we use and have taped onto our microwave.
 

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon white sugar
  • 1/4 teaspoon salt
  • 3 eggs
  • 2 cups milk
  • 2 tablespoons butter, melted
  • Vanilla, optional

Directions

  1. Mix the eggs and milk together in a blender.
  2. Add the flour, white sugar, and salt and blend unto smooth.
  3. Add the butter and vanilla and give it another whirl in the blender.
  4. Heat a frying pan over medium high heat. 
  5. Spray a bit of Pam onto the frying pan then add a small amount of the batter. Be sure to pour from the outside of pan and tip the pan to cover the bottom of the pan.
  6. Heat on both sides for about 2minutes, running spatula around the edges of the thin pancake to flip, and then transfer to a plate.
  7. Repeat steps 5-6 until all the batter is used.

Fill with whatever fruit, chocolate, whip cream mixture when using vanilla, or try ham and cheese, spinach and onions, or anything that sounds good to you, and then roll up the crepe and dig in.
