Lauren's Cornbread Dressing

I got this recipe from a cooking class which took place at the Macey's in Provo sometime in the fall of 2010. We absolutely LOVE this! 

Ingredients
1 pound pork sausage
1 small onion, diced
2 stalks celery, diced
1 12 ounce package cornbread stuffing
1 cup chicken broth
1 cup pecans, toasted and chopped

Directions
Place pecans in a dry skillet. Toast on medium heat until fragrant, 5-8 minutes, stir often. Remove from heat and allow to cool.
In a medium pan brown sausage, Remove from pan and allow to drain.
Wipe out pan and add 1 tablespoon vegetable oil on medium heat. Add onions and celery, saute until tender. Place contents of stuffing mix into a large bowl. Add onion, celery, and sausage.
Add chicken stock 1/4 cup at a time until desired consistency is reached.
Chop toasted, cooled pecans to mixture. Toss to cmobine all ingredient.
Taste and adjust seasoning. Serve immediately.
